Rest Day Muffins

It’s a rest day for me today and for some reason on rest days I just can’t stop eating! I don’t know if its because my body is repairing itself and recovering from the training or just  because I’ve got more time as I’m not spending half of it swimming, cycling and running, but whatever it is I’ve always got the munchies.

So, I set to baking again and the cake of the day today was Baklava Muffins – Deliciously light fluffy muffins with a pecan nut toffee and honey topping. Mmm Mmm. Although I must admit to having polished off a Lemon, Lime and Poppy Seed Cake with Morgan at lunch time as well as eating the muffins after a homemade curry dinner.

They turned out lovely, although I think I’ll add some baking powder next time just to make them rise up out of the cases a little more.
