Apple and Lime Raita Recipe

As promised, here’s the recipe I used for the Apple and Lime Raita that we had with our Banana Curry the other evening. It’s very easy to make, was a nice refreshing, crisp accompaniment to the curry and I think it’ll work well as an exotic salad / coleslaw with barbeques and such like. We often make our own coleslaw these days and this is very similar but with apple and lime rather than cabbage and carrots. It has to be healthier than shop bought coleslaws and salads as well.

Ingredients

1 small onion
2 apples
Zest and juice of half a lime
1 tbsp Natural Yoghurt
Bunch Fresh Coriander

Method

Simply chop the apples, onion and coriander and add all the ingredients together in a bowl and stir together. That’s all there is to it. I finely chop the onions and chop the apples into smallish cubes and use our own home made yoghurt. It’s surprising how nice this is so give it a go.

In fact, writing this blog post has just encouraged me to make some more to have with dinner tonight (if I don’t eat it before then) – it took me less than 5 minute to make and here’s the result.
