Cooking with Goose Eggs

Ann from the Aberystwyth Bee Keepers Association gave me some goose eggs last time we were up at her house. We went and took them straight from the goose nest and Morgan got to see a day old hatchling while we were there. They are huge, much bigger than a hens egg, and Ann suggested using 1 goose egg instead of 2 hens eggs.

We just polished off the second Guinness Cake made with one of the eggs at work and it has gone down really well. You wouldn’t know it was made with anything different. I wonder what they’d taste like in other dishes like a quiche where they are not so disguised?
