{"id":12780,"date":"2013-03-29T13:54:05","date_gmt":"2013-03-29T13:54:05","guid":{"rendered":"http:\/\/www.alananna.co.uk\/blog\/?p=12780"},"modified":"2013-03-29T14:31:09","modified_gmt":"2013-03-29T14:31:09","slug":"rotorua-mud-cake","status":"publish","type":"post","link":"https:\/\/www.alananna.co.uk\/blog\/2013\/03\/rotorua-mud-cake\/","title":{"rendered":"Rotorua Mud Cake"},"content":{"rendered":"<p>It was Good Friday, I had a <a title=\"Pre-Race Lurgy\" href=\"https:\/\/www.alananna.co.uk\/blog\/2013\/pre-race-lurgy\/\">pre-race lurgy<\/a>, Morgan was exhausted after a term of school, Anna was having a well-earned day off and we were all being lazy at home so I decided to try another recipe from our <a title=\"Volcanic Kitchens\" href=\"http:\/\/www.volcanickitchens.com\/\">Volcanic Kitchens<\/a> cookbook. This time it was <strong>Rotorua Mud Cake<\/strong> but there was no photo to give me an idea of how it should look, just a photo of a bubbling mud pool from the geothermal park at Rotorua.<\/p>\n<div id=\"attachment_12781\" style=\"width: 130px\" class=\"wp-caption alignright\"><a href=\"https:\/\/www.alananna.co.uk\/blog\/wp-content\/uploads\/2013\/03\/mud_cake.jpg\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-12781\" class=\"size-thumbnail wp-image-12781\" alt=\"Rotorua Mud Cake\" src=\"https:\/\/www.alananna.co.uk\/blog\/wp-content\/uploads\/2013\/03\/mud_cake-120x90.jpg\" width=\"120\" height=\"90\" srcset=\"https:\/\/www.alananna.co.uk\/blog\/wp-content\/uploads\/2013\/03\/mud_cake-120x90.jpg 120w, https:\/\/www.alananna.co.uk\/blog\/wp-content\/uploads\/2013\/03\/mud_cake-480x360.jpg 480w, https:\/\/www.alananna.co.uk\/blog\/wp-content\/uploads\/2013\/03\/mud_cake.jpg 850w\" sizes=\"auto, (max-width: 120px) 100vw, 120px\" \/><\/a><p id=\"caption-attachment-12781\" class=\"wp-caption-text\">Rotorua Mud Cake<\/p><\/div>\n<p>The recipe started off by saying &#8220;this cake has a very different texture&#8221;. Even so I was a little skeptical as I made it because\u00a0the mixture was the runniest cake mixture\u00a0I&#8217;ve ever seen. In went:<\/p>\n<ul>\n<li>250g melted butter<\/li>\n<li>250g melted chocolate<\/li>\n<li>100g sugar<\/li>\n<li>80g brown sugar<\/li>\n<li>20g coffee<\/li>\n<li>400ml of hot water<\/li>\n<\/ul>\n<p>We didn&#8217;t quite have 20g of instant coffee so I used what we had and then made 400ml of coffee from our <a title=\"Senseo Coffee Machine\" href=\"https:\/\/www.alananna.co.uk\/blog\/2011\/coffee-snobs\/\">senseo coffee machine<\/a> and used that as the hot water. The recipe said to mix well until smooth. Smooth\u00a0isn&#8217;t quite what I&#8217;d call it as at this stage it was just liquid. Next into the mixture was:<\/p>\n<ul>\n<li>2 eggs<\/li>\n<li>1 tbsp of vanilla extract<\/li>\n<\/ul>\n<p>The recipe said to beat until combined. Well, once again there was no beating necessary as it was still just a liquid. I hoped that the flour would thicken it up as the next stage was to fold in:<\/p>\n<ul>\n<li>185g self-raising flour<\/li>\n<li>23g cocoa<\/li>\n<\/ul>\n<p>Trouble is it wasn&#8217;t really possible to fold the dry ingredients into such a liquid mixture as you would just end up with lumps of flour floating in the liquid so I ended up mixing it in well with an electric mixer. By now it was still the runniest cake mixture I&#8217;ve seen &#8211; probably the consistency of double cream &#8211; so I wasn&#8217;t really feeling too confident as I poured it into two lined loaf tins and put it in the oven at 150\u00b0C.<\/p>\n<p>I was half expecting a gooey mess to emerge and probably one that had boiled over just like a geothermal mud pool and made a mess of the oven, but it smelt nice as it cooked so there was some hope. \u00a0When I took them out after 50 minutes then to our surprise and delight they had indeed formed into cakes and looked as though they were cooked. We had a slice each straight away while it was still warm.<\/p>\n<p>It was certainly very moist and dense, but I think that is how it is supposed to be and with the rich chocolate and coffee flavours it was quite a treat. I had some evaporated milk on mine and it should be delicious with custard or cream. It can be served hot or cold and won&#8217;t last long here!<\/p>\n<p>I&#8217;ve just found a nice <a href=\"http:\/\/www.foodspotting.com\/reviews\/1330894\">photo of a mud cake from a restaurant in Rotorua<\/a> itself and ours looks pretty much the same as far as the texture of the cake is concerned &#8211; maybe I should have looked at this before I started baking! With a little icing sugar on top, some ice-cream and a berry coulis ours would look just the same.
