Lemon, Honey and Ginger Drink

While we were in New Zealand we came across a lemon, honey and ginger cordial drink. You could have it hot, cold, as an ice-cream topping, with fizzy water…however you fancy and it was lovely. We tried to find some to bring home but after seeing it everywhere couldn’t seem to find any on our last day shopping back in Auckland so I decided to make some of our own. I did a bit of researching on-line and ended up with the following recipe.

  • 1 cup runny honey (I used the cheapest runny honey I could buy rather than our own which is in limited supply this year)
  • 1 cup of lemon juice (try to avoid the pips)
  • 2 table spoons water
  • 2 table spoons grated root ginger

Gently warm the honey with the water. Once combined add in the lemon juice and grated ginger. Store in the fridge.

We’ve only tried this as a hot drink so far and it is perfect on a cold day or if you have a cold/sore throat. Alan like the bits of lemon and ginger floating in his drinks but I prefer it without so I either let these settle to the bottom of my cup or sieve them out before making it.
